• 1 package (14 g) dried bolete (or porcini) mushrooms
• 8 cups (2 litres) chicken broth
• 1 1/2 lb (675 g) white mushrooms, coarsely chopped
• 2 garlic cloves, chopped
• 1/4 cup (55 g) butter
• 2 shallots, chopped
• 2 cups (420 g) arborio rice
• 3/4 cup (180 ml) dry white wine
• 1 1/2 cups (105 g) fresh Parmesan cheese, grated, plus more for serving
