• 2 pounds yukon gold potatoes
• 3 to 4 large egg yolks
• 1/2 cup freshly grated Reggiano Parmigiana
• 1/4 teaspoon freshly grated nutmeg
• 1/2 teaspoon Maldon sea salt
• 1/4 teaspoon freshly ground black pepper
• 1-1/4 cup all-purpose flour, plus more for dusting board and dough
• 1 recipe for simple red cream sauce
