Ingredients

  • 3 Kg Mutton (cut in medium sized pieces (you can use lamb too))
  • 7 Cups sliced/finely chopped onion (to make beresta or fried onion )
  • 6 Cups onion (Cut in cube)
  • 12 Teaspoon ginger paste (have used frozen fresh gingers. I store them in an ice tray. I have used 12 cubes)
  • 6 Teasponn garlic paste (half of ginger paste)
  • 3 Teaspoon Turmeric power
  • 6 Teaspoon Coriander Powder
  • 12/14 Teaspoon red chilli powder (I mixed chilli and Kashmiri chili to control the heat)
  • 4 Teaspoon Black pepper powder
  • 14 Teaspoon Roasted cumin powder
  • 8 Pieces Red chill
  • 18/20 Pieces green cardamom
  • 8 Pieces black cardamom seeds, roughly crushed
  • 10/15 cloves
  • 4 Teaspoon Radhuni powder (You can use celery seed in London)
  • 2 Teaspoon nutmeg powder
  • 2 Teaspoon mace powder
  • 4 Teaspoon Bengali Garam Masala (powder of cinnamon and cardamom)
  • 8 Teaspoon Finely chopped garlic
  • 1 cup Finely chopped onion
  • 4 Teaspoon Cumin powder
  • 4 Cup (120ml) Mustard oil
  • 1 Cup Mustard oil
  • Salt to Sate
