- 2 Cups milk ((I used 2%))
- 2 tbsp whole wheat flour
- 1 tsp dijon mustard
- 1/2 tsp salt
- 1/4 tsp pepper
- 5-6 Sprigs fresh thyme
- 3 Cloves garlic (garlic)
- 2 Large sweet potatoes ( skin on, cleaned and sliced thinly (1/8 inch))
- 1/2 Cup extra old cheddar (, grated)
- 2 tbsp grated Parmesan cheese
