caramelized garlic and bacon jam - Lesley Stowe Raincoast Crisps

Ingredients

• 1 lb double smoked bacon cut into 1 inch pieces
• 1 cup finely chopped onions
• 1/4 cup finely chopped shallots
• 6 cloves of roasted garlic
• 2 Tbsp. brown sugar
• 1 cup strong coffee
• 1/3 cup maple syrup
• 2 Tbsp. blackstrap molasses
• 1 Tbsp. fresh thyme
• 2 Tbsp. sherry vinegar
• 1 cup water
• pinch of freshly ground black pepper
