Pumpkin Pie

Ingredients

• 225g plain flour
• 35g icing sugar, sifted
• 125g chilled unsalted butter, chopped
• 1 egg yolk
• 2 tbsp iced water
• 450g peeled pumpkin, cut into 2cm pieces
• 1 tablespoon honey
• 1 tablespoon golden syrup
• 80g brown sugar
• 1 teaspoon ground cinnamon
• ½ teaspoon ground nutmeg
• ½ teaspoon ground cloves
• ½ teaspoon ground ginger
• ½ teaspoon allspice
• 400ml thickened cream
• 3 eggs, plus 1 extra yolk
• Walnuts, Pecans and pumpkin seeds for garnish
