Hake with Hazlenuts etc (Roca)

• 95 ml Water
• 1 ea Lemon zest of
• 1 tsp Cilantro freshly ground
• 4 ea Hake Fillets about 150g each
• Salt
• 1 ea Egg Yolk
• 1 tbsp Warm Water
• 1 tbsp Lemon Juice
• 1 cup Oil, Hazlenut
• 28 g Hazlenuts tosted and ground
• 240 ml Grenache
• Cilantro Leaves
• Mustard Flower Petals
