• 1 cup all purpose flour
• 1 1/2 tsp baking powder
• 1/2 tsp kosher salt
• 1 1/4 cups granulated sugar
• 4 each whole eggs
• 1 Tbsp lemon zest
• 1/3 cup whole milk
• 1 cup lemon extra virgin olive oil
• 1 Tbsp lemon extra virgin olive oil (to coat the muffin tins)
• 2 cups mission figs, ¼ inch dice
• 2 Tbsp granulated sugar
• 2 Tbsp balsamic vinegar
• 1 pinch salt
