• 4 ears sweet corn
• 2 T. melted butter
• 1 t. chipotle chili powder
• ½ cup mayonnaise
• 1 T. lime juice
• 1 T. finely chopped cilantro
• ½ t. seasoned salt
• 1 avocado, pitted and diced
• 1½ cups shredded four-cheese Mexican cheese blend
• ¼ cup diced red bell pepper
• ¼ cup diced red onion
• 1 jalapeno, seeded and diced
• ½ t. kosher salt
