- 210g (1 cup) castor sugar
- 60ml (¼ cup) hot water
- 80ml 1/3 cup) golden syrup + 45ml (3 tbsp)
- 15ml (1 tbsp) instant coffee
- 375ml (1½ cups) milk
- 125ml (½ cup) fresh cream
- 3 large eggs, beaten
- 100g shelled pistachios, finely chopped, to serve
