• 3/4 lb Beets, peeled and chopped
• 1/2 lb Carrots, chopped

• 6 oz Red cabbage ((6 oz = ~3 cups, sliced))
• 2 Tbsp Parsley (opt), chopped
• 4 cups Beef broth / stock
• 1/4 cup Tomato paste
• 1 Bay leaf
• 4 Tbsp Sour cream
