Fagioli fusili
This comforting veggie dish gives us three of our 5-a-day! The combo of sweet leeks, tender artichokes and flavourful bay oil takes this pasta to another level!
Ingredients
- 2 cloves of garlic
- 2 carrots
- 2 leeks
- olive oil
- 8 fresh bay leaves
- 1 x 400g tin of cannellini beans
- 1 x 400g tin of artichokes in water
- 500ml really good organic veg stock
- 300g wholewheat fusilli
- 20g Parmesan cheese
- 4 sprigs of fresh flat-leaf parsley
