Ingredients

• 1 tsp olive oil
• 1 tsp kosher salt
• 2 C coarsely chopped onion
• 4 thyme sprigs
• 1 (14-oz) can fat-free, less sodium beef broth
• 4 large carrots, peeled and cut diagonally into 1-inch pieces
• 1 (3-lb) boneless rib roast, trimmed
• 1/4 tsp freshly ground black pepper
• 1 cup dry red wine (cab/sauv)
• 3 cloves garlic, chopped
• 1 bay leaf
• 2 lb yukon gold potatoes, peeled and cut into 2-inch pieces
