Raspberry cloud cake - Moje wypieki

Ingredients

• 3 egg yolks from large eggs
• 30 g icing sugar
• 1/2 tsp baking powder
• 1 tsp vanilla extract
• 150 g plain flour
• 100 g butter, cut into cubes
• 600 g raspberries (fresh or frozen)
• 3 raspberry jelly packets (each for 500 ml of water)
• 1 litre of boiling water
• 500 ml whipping cream 36%, chilled
• 250 g mascarpone cheese, chilled
• 3 Tbsp icing sugar
• 1 tsp vanilla paste or a seed of 1 vanilla pod
• 3 egg whites, at room temperature
• 150 g caster sugar
• 2 tsp potato starch
• 40 – 50 g almond flakes
