- 1 teaspoon kosher salt
- 8 ounces (2 sticks) cold unsalted butter, cut into small pieces
- ¼ cup ice water, maybe a bit more
- 2 cups cherry or grape tomatoes
- 1 shallot minced
- 1 clove garlic, peeled and minced
- 3 tablespoons olive oil
- 2 ounces feta cheese, crumbled
- 2 tablespoons fresh oregano leaves, minced
- 1 large egg yolk, lightly beaten with 1 tablespoon water, for egg wash
