• 65 g (2 1/2 oz) butter
• 1 medium onion, chopped
• 675 g (1 1/2 lbs) assorted mushrooms (e.g. whole button, chestnut, oyster)
• 2 tsp plain flour
• 150 ml (1/4 pint) vegetable stock
• 3/4 tsp Coarse Ground Black Pepper
• 1 tsp Herbes de Provence
• 2 tsp French mustard
• 1/2 tsp salt
• 300 ml (1/2 pint) soured cream
• 400 g (14 oz) tin sweetcorn, drained
