This roasted garlic and ricotta tart is made with lots of roasted garlic, which becomes very soft in flavor when roasted, pairing perfectly with the creamy ricotta.

- 250 grams of ricotta
- 3 eggs
- 150 ml of cream
- 2 sprigs of fresh rosemary
- olive oil
- pepper and salt to taste
