Ingredients
- 2 tablespoons olive oil
- 1 cup pearl couscous (also known as Israeli couscous)
- 1 1/4 cups water
- 1/2 cup poblano peppers, roasted, peeled, deveined and diced in small pieces
- 1/2 cup shredded Brussels sprouts
- 1 cup roasted turkey, shredded
- 1/2 cup pomegranate arils
- 1/3 cup pecans, chopped
- Juice of 1 lemon
- 1 1/2 tablespoons balsamic vinegar
- Salt and pepper, to taste
