Ingredients
- 3 cloves Garlic, minced
- 1 Onions, chopped
- 1 lb Eggplant, chopped ((Any variety can work))
- 4 Zucchini, chopped
- 1 can Garbanzo beans (14 oz / 397 g can), rinsed and drained ((~2 cups))
- 1 Tbsp Butter
- 1 cup Couscous, uncooked ((Sub 2 cups cooked))
- 1 1/2 Tbsp Cooking oil
- 1 1/2 Tbsp Capers
- 2 cups Crushed tomatoes
- 1 tsp Paprika
- 1/2 tsp Oregano
- 1/2 Lemons, juice of
