• 600g Premium Game Venison Medallions
• 1 tsp Smoked paprika
• 1 tsp Fennel seeds
• 1 tsp Coriander seeds
• 1 tsp Cumin seeds
• Pinch of Salt and Pepper
• 50ml Oil
• 1 Courgette, cut into rounds
• ½ Punnet cherry tomatoes
• 1 bunch asparagus
• 1 ptk mini vine peppers, or regular capsicum
• 1 bunch baby carrots
• 100g Goats cheese
• Fresh mint
• Fresh Basil
• Handful of basil leaves
• 1 tsp dijon mustard
• 12 tbsp olive oil
• 4 tbsp red wine vinegar
• Salt and pepper to taste
