Coastal Patagonian Scallop Salad

Ingredients

• 3 oz 90 g Patagonian Scallops (80/120)
• 1 tsp 5 g Butter, Unsalted
• 1 tbsp 8 g Shallots, Minced
• ½ tbsp 6 g Garlic, Minced
• ½ tsp 0.5 g Fennel Seed
• 1 leaf 0.2 g Bay Leaf
• 1 cup 250 ml White Wine
• 1 ¼ cup 300 ml Water
• 10 oz 300 g Green Cabbage, Red Cabbage and Carrot Blend, Shredded
• ½ orange 80 g Orange Juice and Zest
• 2/3 cup 150 g Sour Cream
• To taste Salt
• To taste White Pepper
• 1 tsp 0.8 g Orange Zest
• ½ cup 110 g Flour, All-purpose
• ¾ cup 180 g Sugar
• ½ cup 115 g Butter, Unsalted, Melted
• 3 large 75 g Egg Whites
