Ingredients

• 1 cup ground almonds (about 100 grams)
• 3 cups icing sugar (divided)
• 3 large egg whites (at room temperature)
• 1/4 tsp. cream of tartar
• Pinch of salt
• 1/4 cup extra fine sugar (berry sugar)
• 1/8 tsp. red food coloring
• 1/2 tsp. lemon extract
• 3 oz. white chocolate (coarsely chopped (about 85 grams))
• 2 Tbsp half and half cream (10%)
• 1/2 cup butter (at room temperature)
• 3 Tbsp Raspberry Jam
