• 1 c. buttermilk
• 1 15.25 oz. box spice cake mix
• 1 15-oz. can pumpkin puree
• Chopped candied ginger, for garnish, optional
• 1/2 c. canola oil
• 3 large eggs
• 16 oz. cream cheese, at room temperature
• 1 1/2 c. granulated sugar, divided
• 2 tsp. pumpkin pie spice
• 2 1/2 c. crushed gingersnap cookies , plus more for garnish
