Bahamian pork tenderloin by Corpulent Capers - Porc Blasus

Ingredients
- 2 x 450g pork tenderloin fillets, trimmed
- 1 tbsp rapeseed oil
- 2 tbsp rapeseed oil
- 1 tbsp paprika (sweet or smoked)
- 1 tbsp dried thyme
- 1 tbsp dried oregano
- 1 tsp sea salt
- ½ tsp red pepper flakes
- 175ml fresh orange juice
- 2 tbsp fresh lime juice
- 1 tbsp garlic, minced
- 1 habanera or any hot chilli, finely chopped (for less heat remove the seeds)
- 2 tbsp honey
- 1 tbsp olive oil
- 275g ripe mango, diced
- 1 tbsp fresh coriander, chopped
- 1 tbsp tops of green onions, chopped
- reserved 60ml of basting sauce
