- 4 forequarter lamb chops, trimmed
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 tsp dried oregano
- 3 cloves of garlic, crushed
- Salt and pepper to season
- Extra lemon wedges to serve
- 4 peaches, stones removed, quartered
- 150g marinated feta in oil (oil reserved)
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 150g baby rocket leaves
- 1/2 cup almonds, toasted, chopped
- Parsley leaves to serve
