Spicy Sweet Potato & Spinach Stew | McCain South Africa

Ingredients

• 2 cups of McCain Sweet Potato
• 1 cup of McCain Garden Spinach
• 4 tablespoons of coconut oil
• 1 medium onion chopped
• 1 tablespoon of crushed garlic
• 1 green chilli chopped
• 1 tomato chopped
• 1 sachet of concentrated liquid vegetable stock
• 4 cups of hot water
• 1 teaspoon of tomato paste
• 1 teaspoon of salt
• 1 teaspoon of paprika
• 1 teaspoon of leaf masala
• ¼ teaspoon of ground cinnamon
• ½ teaspoon of thyme
• ½ teaspoon of basil
• 1 sprig of fresh rosemary
• 1 can of white bean drained and washed
