Ingredients

• 2 cups of McCain Diced Sweet Potato
• 2 cups of McCain Peas, Carrots & Corn Mix
• 4 tablespoons of coconut oil
• 1 medium onion chopped
• 1 tablespoon of crushed garlic
• 1 tomato chopped
• 1 sachet of concentrated liquid vegetable stock
• 4 cups of boiling hot water
• 1 teaspoon of dried thyme
• 1 teaspoon of dried basil
• 1 teaspoon of parsley
• 1 sprig of fresh rosemary (or dried)
• 1 teaspoon of paprika
• 1 teaspoon of turmeric
• 1 teaspoon of tomato paste
• ½ teaspoon of crushed chili
• 1 teaspoon of salt
• ½ teaspoon of black pepper
• 1 tablespoon of cornstarch
• 1 cup of coconut milk
• 1 can of chickpeas drained and washed
