Leeky Shepherds Pie - Student Recipes

Ingredients

• 2 Baking Potatoes
• 3 Lage leeks
• 1 Cup of finely sliced mushrooms
• 1 Carrot finely sliced
• Big ol' handful of spinach
• Salt and Pepper
• 1/2 cup soymilk (or normal if you prefer)
• 1 glass of white wine (cheapo stuff works as well as yummy wine)
• 1 tblspn soy butter
