Caribbean Sweet Potato Black Bean Salad – Catskill Animal Sanctuary

Ingredients

• 2 medium sweet potatoes, peeled and cubed (1/2 inch cubes)
• 1 cup corn kernels, fresh or frozen (defrost if using frozen)
• ½ cup extra virgin olive oil
• 1 teaspoon Dijon mustard
• 2 teaspoons real maple syrup
• 1 teaspoon cumin
• 1 teaspoon cinnamon
• ¼ teaspoon cayenne pepper
• 1 teaspoon coarse salt
• 2 cups cooked black beans (or 15-oz, rinsed and drained)
• 2 green onions (scallions), sliced thinly
• 1 cup roasted, salted peanuts, chopped
• 2 cloves garlic, minced
• 3 tablespoons fresh lime juice
