- Fresh Pappardelle pasta 250g
- 2 shallots finely chopped
- ½ cup white wine
- 1 garlic clove leave whole
- 1 tbsp butter
- 2 tbsp of olive oil
- ½ cup grated parmiggiano
- 5 eggs (whole)
- 500g Flour (Tipo 00)
- Salt
- Pasta machine attachment (for Lasagnette or similar - 2cm thickness)
