Recipe for Heirloom Tomato Pizzas at Zupan’s Markets

Ingredients

• Zupan’s Markets Organic Olive Oil
• 1 ¾ cups warm water (about 110°F)
• 1 envelope instant yeast
• 2 tbsp Zupan’s Markets Organic Olive Oil
• 4 cups (22 oz) all-purpose flour
• 2 tsp kosher salt
• 1 pound ripe heirloom tomatoes, sliced crosswise into thin rounds, and set on paper towels to absorb excess moisture
• Salt and pepper
• 12 ounces shredded mozzarella cheese
• 1 container Castelvetrano green olives, sliced
• ½ red onion, thinly sliced
• Grated Parmesan cheese, for sprinkling on top
• 3 cups fresh arugula or microgreens
• Balsamic vinegar for drizzling
