Babka Potato Recipe

Ingredients

• 2 pounds (900g) Yukon Gold potatoes, peeled and cubed
• 4 tablespoons unsalted butter
• 1/2 cup grated Gruyère cheese
• 1/4 cup minced fresh chives
• 1/4 cup sour cream
• 1 teaspoon salt
• 1/2 teaspoon freshly ground black pepper
• 1/4 teaspoon ground nutmeg
• 3 1/2 cups (440g) All-purpose flour, Sifted
• 2 1/4 teaspoons (1 packet) Active dry yeast
• Warm whole milk 1 cup (240ml), Around 110°F (43°C)
• 1/4 cup granulated sugar
• 6 tablespoons (85g) Unsalted butter, Softened
• 2 Large eggs, Room temperature
• 1/4 cup water
• 1 teaspoon lemon juice
• Optional: 1 teaspoon vanilla extract
