Ingredients

• 1 tablespoon rum (optional)
• 1 cup coffee brewed strong
• 1/4 teaspoon almond extract
• 1 package lady fingers (about 7 ounces, found in the cookie section)
• 4 eggs, large (separate yolks and whites)
• 2/3 cup white sugar, split
• 16 ounces mascarpone, straight from the fridge
• 1/3 cup pistachio spread
• 1/2 teaspoon almond extract
• 1 teaspoon vanilla
• 1/3 cup finely chopped pistachios
