Birria Tacos Recipe, Best Homemade Birria | Gran Luchito

Ingredients

• 5 large vine tomatoes (halved)
• 1 white onion (cut into chunks)
• 1 whole garlic (whole head of garlic cut in half)
• 4 spring onions (cut into chunks)
• 530g / 1.2 lb brisket
• 650g / 1.4 lb short rib
• Salt and freshly ground black pepper (for seasoning)
• Olive oil (for cooking)
• ½ teaspoon ground clove
• 1 teaspoon ground cumin
• 1 teaspoon coriander seeds
• 1 teaspoon black peppercorns
• 1 tablespoon Gran Luchito Chipotle Paste
• 125ml / ½ cup apple cider vinegar
• 2 bay leaves
• Handful of coriander (stalks and leaves)
• 1 litre / 4 ½ cups of water
• 1 packet Gran Luchito Soft Taco Wraps
• 150g / 5 oz grated cheddar
• ½ white onion (finely chopped)
• 1 handful of coriander ( finely chopped)
• 3-4 limes (cut into wedges)
