Mexican Sweet Potato, Corn and Bean Salad

Ingredients

• 1 kg sweet potatoes, scrubbed
• 2 tbsp olive oil
• 2 tbsp fajita spice
• 3 fresh corn cobs
• 425 g can black beans, drained, rinsed
• 2 tomatoes chopped
• 1 avocado chopped
• 1/2 small red onion halved, thinly sliced
• 1 cup coriander leaves
• DRESSING:
• 3 tbsp extra virgin olive oil
• 1 lime juiced
• 1 tbsp finely chopped pickled jalapeno
• 1 tsp caster sugar
