Boned & Rolled Stuffed Saddle of lamb – SmokeyQ
This was our Australia Day 2022 lunch and for something different i asked my butcher to do a boned out lamb saddle in which i created my own stuffing.
Ingredients
- Boned Saddle of lamb 2-3 kg
- Pecan nuts 1 x cup
- Olive oil
- Fresh or stale bread / Bread crumbs x 2-4 cups
- Brown onion x 1
- Butchers twine
- Smokey Q Coffee Rub
- Smokey Q SPG x 1 tbs
- 2 eggs
- Fresh dates x 8
