Ingredients

• 3 pounds ripe tomatoes, quartered and seeded
• 2 red bell peppers, trimmed of seeds and roughly chopped
• 1 tablespoons sugar
• 1 medium cucumber, peeled, seeded and chopped
• 2 cloves garlic, crushed
• ¼ cup sherry vinegar
• 1 tablespoon olive oil
• sea salt to taste
• 4 shots vodka – optional if serving as a cocktail
