Cauliflower soup with cream - Vicki's Greek Recipes

Ingredients

• 500gr cauliflower florets (around one large head cauliflower)
• 100gr potatoes (1 medium sized potato)
• 80gr leeks (half a leek)
• 70gr yellow onion (2 medium onions)
• 700ml vegetable stock
• 200ml milk (or 800ml vegetable stock with 100ml double cream)
• 2 tablespoons extra-virgin olive oil
• 1 garlic clove
• 1-2 thyme sprigs
• 1 and 1/2 teaspoon salt
• 1/2 teaspoon white pepper
• ginger (optional)
