Lamb Merguez Sausage Shakshuka - Deliciously Yorkshire

Ingredients

• 480g Lamb Merguez Sausages
• 3 large red peppers, thinly sliced
• 6 cloves of garlic, peeled and crushed
• 2 onions, peeled and thinly sliced
• 2 fresh bay leaves
• 2 tsp sweet smoked paprika
• 2 tsp toasted cumin seeds, lightly crushed
• 1 tin of plum tomatoes
• 4 eggs
• 1 bunch of finely chopped fresh coriander
• 1 whole dried cayenne pepper
