• 75g butter
• 75g brown sugar
• 1 egg yolk
• 50g golden syrup
• 1 teaspoon ground ginger
• 1/2 teaspoon ground cinnamon
• 1/2 teaspoon mixed spice
• 250g plain flour
• 1/2 teaspoon bread soda
• 3 tbsp cold water
• Buttercream: 100g butter, 100g icing sugar, dash vanilla essence
• Red icing: 100g icing sugar, Cold water, Red food colouring paste
• 50g melted dark chocolate (optional)
