Will and Steve's roast turkey with duck fat potatoes and honeyed carrots - 9Kitchen

Ingredients

• 1 whole turkey (2kg)
• butcher's string
• 8 large potatoes, peeled and chopped into thirds, left to sit in cold water
• 16 heirloom carrots, trimmed and halved lengthways
• 6 oranges, 3 sliced into 1cm rounds, 3 quartered
• 6 lemons, 3 sliced into 1 cm rounds, 3 quartered
• 6 cloves of garlic
• 2 tablespoons butter
• 3 punnets of thyme
• 1 tub of duck fat
• 1 tablespoons honey
• drizzle of olive oil
• salt and pepper
