• 375 g ready-rolled all-butter puff pastry
• 1 egg, beaten
• 2 onions, peeled and finely chopped
• 1 bay leaf
• 1 tbsp. olive oil
• 75 g butter
• 2 tbsp. plain flour
• 350 g mushrooms (such as chestnut, portabello and oyster), rouhly chopped but not too lare
• 150 mL white wine
• 150 mL double cream
• Salt and black pepper
