Spinach Pie – Olea Estates

Ingredients

• 3 thick pastry/phyllo leaves
• 3.3 lbs spinach
• 8 oz of Olea Kalamon (Kalamata) olives, cut in rings
• 4 tbsp black sesame seeds
• 1/2 lbs Greek feta cheese, crumbled
• 4 onions
• 4 leeks, only the white part, cut into thin pieces
• 1/2 bunch fresh fennel, finely chopped
• 4 eggs, lightly beaten
• 1 cup Olea Estates organic EVOO
• Olea sea salt with sesame and oregano and black pepper
