• 4 floury potatoes, peeled, cubed
• 2 sage leaves, chopped
• 2 tbsps chopped parsley leaves
• 1 tbsp paprika
• 2 tsps mustard
• 120g mayonnaise
• 1 garlic clove, minced
• 60g diced onion
• 60g diced celery
• 3 slices cooked streaky bacon, crumbled
• 1 (170g) skinless chicken breast
• Salt and freshly ground black pepper
• 1 1/2 tbsps extra-virgin olive oil
• 2 heads butterhead lettuce
