Chicken under a brick by Laurent Dagenais – La Belle Excuse

Ingredients

• 1 whole chicken (spatchcocked)
• 1 onion (cut in thin slices)
• 4-5 garlic cloves (cut in thin slices)
• 1 lemon (cut in thin slices)
• 1 sprig of rosemary
• 30 ml (2 tablespoons) of La Belle Excuse roasted garlic and white balsamic Mustard
• 30 ml (2 tablespoons) of mild paprika
• 45 ml (3 tablespoons) of olive oil Laurent Dagenais X La Belle Excuse
• Salt and pepper to taste
