• ½ pound Gruyere cheese, shredded
• ½ pound Swiss cheese, shredded
• 2 tablespoons cornstarch
• 1 small garlic clove, halved
• 1 teaspoon ground cumin
• ½ teaspoon ground coriander
• 1 cup pale lager
• 1 tablespoon lemon juice
• 1 to 2 teaspoons chipotle in adobo sauce, to taste
