Preheat your oven to 180c. Mix all the sauce ingredients together, add to a saucepan and bring to the boil. Simmer for 2 minutes, stirring all the time....

- 125 ml Milk
- 2 large tablespoons Apricot Jam
- 30 g Butter
- 80 g Sugar
- 1 teaspoon Bicarbonate of Soda
- 1 Egg
- pinch of Salt
- 20 ml White Wine Vinegar
- scant 1/4 cup Cocoa Powder
- For the Sauce
- 375 ml Fresh Cream
- 150 g Sugar
- -125 g Butter
- 1/4 cup Cocoa Powder
