- cloves for studding (about a small handful)
- 2 tablespoons honey
- 2 tablespoons good quality Dijon mustard
- ½ cup fresh orange juice (squeeze your own if you can)
- ½ cup brown sugar
- cloves garlic (skin removed, bashed)
- 1 teaspoon sea salt flakes
- a few sprigs of fresh thyme
- a good splash of whisky
