Lemon Cake with Lemon Sauce - IQS Recipes

Ingredients

• 1 cup almond meal.
• 1/4 cup coconut flour.
• 1/2 cup milk of your choice.
• 3 eggs, separated.
• 1/3 cup extra-virgin olive oil (mild in flavour).
• juice and rind of two lemons (reserve 1 tablespoon juice for sauce).
• 1 tablespoon rice malt syrup (or to taste).
• 1/2 teaspoon baking powder.
• 1 teaspoon vanilla bean paste.
• 1/2 teaspoon baking soda.
• 1/2 cup coconut cream, scooped from the top of a chilled tin of coconut cream.
• 1 teaspoon rice malt syrup.
• 1 tablespoon lemon juice.
