Roasted trout with Orange & Rosemary | Goatsbridge Trout

Ingredients

• 1 orange, zested & juiced
• 3 tbsp. extra virgin olive oil
• 2 tbsp. fresh lime juice
• 2 tbsp. fresh rosemary, chopped
• 4 cloves garlic, peeled and smashed
• 1/2 tsp. salt
• 1 tbsp. fresh ginger, peeled and finely chopped
• 1/4 tsp. pepper
• 1kg Goatsbridge trout fillets
• 1 orange, skin-on, sliced into circles
